Today’s interest in environmentally friendly or “green” products has greatly increased the popularity of peracetic acid (PAA) as a sanitizer in food and beverage processing. It is one of the few treatment products approved for sanitizing foods carrying the “organic” label. Peracetic acid is also being used to bleach cotton, remove biofilms and sterilize medical instruments. PAA is a combination of peroxyacetic acid and hydrogen peroxide. It breaks down to oxygen and acetic acid which has far less impact on the environment than other sanitizers. This makes it ideal for rinsing applications since it requires much less water than traditional sanitizers to remove surface residuals. It is widely used in fruit and vegetable washing, breweries, beverage plants, wineries and even in the dialysis area. Since it can also be used over broad temperature and pH ranges it has several advantages over other sanitizers. A number of producers make PAA available to the industry. LaMotte Company has worked with several of these producers to develop a titration test kit and a variety of test strips for different applications. Testing Peracetic Acid The 7191-01 titration kit can measure either PAA in 15 ppm increments or Peroxide concentrations in 50 ppm increments. There are also 3 ranges of PAA test strips available covering low (0-50 ppm), medium (0-160 ppm) and high (0- 1,000 ppm) range concentrations. |

The 7191-01 is a dropper bottle titration kit for hydrogen peroxide and perocetic acid. The hydrogen peroxide equivalence is 1 drop = 50 ppm. The peracetic acid equivalence can be modified to test different concentrations by using a different sample size. The result is a 1 drop = 6, 15, or 300 ppm equivalence. |

| The Insta-Test 3000 test strips determine peracetic acid concentrations from 0-160 ppm. The test has a 10 second development time. The container has a desiccant liner and tight snap-cap to protect from moisture. Low and high range strips are also available. | ||||
